ODE Olive Oil

ODE’s first release of estate-grown extra virgin olive oil highlights the unique microclimate of our farm, while reinforcing our commitment to quality in everything we produce.

Our 30-year-old Galega and Cordovil olive trees, sustainably farmed, were hand-harvested on October 20th, 2025.

The fruit was cold-pressed to ensure the delicate aromatic and floral characteristics of each variety were preserved.

This delicate oil exhibits subtle notes of nettle, green herbs, and citrus, with a persistent pepperiness and a bright acidic lift. It has a medium-bodied palate with a long, clean, and balanced finish.

The perfect finishing oil for drizzling over fresh salads, grilled seafood, pasta, and hard cheeses.
